2013 Sweet Salvation Truffles Day Five -Annie

Today was our last day and it was our first day where we were left alone in charge of doing everything that needed to be done for a show on Sunday. We first made a vanilla and coconut truffle filling. We then using a pastry bag, we piped them out into small lumps that we then rolled. After that we rolled the sugar free chocolate that we had piped out the day before. After lunch we were left alone so the first thing we did was we put the sugar free chocolate into a bag that had a few cups of vanilla coco powder. We mixed them around until coated. After that we bagged our caramel pieces and refrigerated them. While Lisa then put labels on about a hundred boxes, I dipped the vanilla balls in dark chocolate. We did this all really fast which left us in charge of cleaning this frankly was the worst part of the week but since when is cleaning not?

This whole week was such a good experience. I came into it with some ideas and thoughts of how chocolate truffle making was like but I was wrong. It was so fun and it was great to be given the reins at certain times. I hope I can make truffles from home now and maybe do this internship again.
